From Farm Boy to Diplomatic Table

I was born on a farm in Italy, surrounded by the simple things that would eventually shape my entire life: family, hard work, the land, and food. As a child, I learned that nothing comes easily. I milked cows, plowed fields, watched the crops grow, and later helped harvest what the land had produced. I learned the meaning of patience because you cannot rush a seed. You plant it, you take care of it, and eventually you will see the result.

But there was another education happening inside my home. I grew up in a large family, and I was always watching my grandmother and my mother cooking. The kitchen was the heart of our family. There were always smells, conversations, people coming and going, and food being prepared for many people. I didn't realize it at the time, but those moments were teaching me something that would stay with me for the rest of my life. Food was not simply food. It was family, it was tradition, it was love.

As I grew older, I decided to turn that passion into a profession. I attended culinary school and began working in restaurants and hotels. I learned the discipline of professional kitchens — the importance of precision, timing, cleanliness, and consistency. Every kitchen taught me something different, and every experience added another piece to my education.

My journey eventually took me far beyond the place where I was born. I worked abroad and entered a world very different from the farm where my story began. My career brought me to Washington DC, where I have had the privilege of working in the household of the Italian Ambassador.

When I think about it now, there is something beautiful about the path my life has taken. I started by working the land. I learned to understand ingredients before they ever reached a kitchen. Then I learned how to transform those ingredients into food. And eventually I found myself cooking for people in a completely different world.

But despite all the places I have been and all the people I have met, a part of me has always remained on the farm in Italy. When I cook today, I sometimes think of my grandmother and my mother. I remember watching their hands prepare food for our family — never imagining that one day cooking would become such an important part of my own life.

My story is not really a story about becoming a chef. It is a story about where I came from. A boy on a farm, milking cows and working the fields, watching his family cook in a busy Italian kitchen — and eventually carrying those memories across the world. The farm taught me hard work. My family taught me tradition. Culinary school taught me technique. Restaurants and hotels taught me professionalism. And life taught me to keep moving forward.

Today, after all these years, I understand that every part of my journey was connected. The soil, the kitchen, the restaurants, the hotels, the people, the countries, and the years of work were all preparing me for the life I have today. And I'm still writing the next chapter.

Emy Corsini is a pasta master in the truest sense of the word — not a title earned in a classroom, but a skill passed down through Italian families  and carried forward by hands that know the difference between a tagliatelle and a pappardelle by feel alone.

Emy was surrounded by the kind of cooking that never needed a recipe — where knowledge lived in the hands, in the smell of a kitchen, in the sound of dough being worked on a wooden board. She absorbed it all, and spent years refining that instinct into mastery.

As an Executive Chef, Emy has brought her craft to restaurants, private events, and teaching kitchens across the region. Her pasta classes are not simply cooking lessons — they are an invitation to slow down, to connect with ingredients, and to discover that the most extraordinary food requires nothing more than flour, eggs, and the willingness to be present.

Together with Roberto, Emy brings a depth of knowledge and warmth to every experience — whether she is guiding a group through their first handmade tagliatelle or crafting a multi-course dinner for a private celebration. Her food tastes like Italy because it is made the way Italy has always made it.
